Historia.
A principios del siglo XX, los enólogos de Barolo y Barbaresco creyeron que era necesario unirse para proteger proteger sus producciones, solicitando, en 1908 la creación de un "certificado de origen" emitido por una asociación que operaba bajo el control de administración provincial y unión vinícola piamontesa, pero no fue hasta 1924, cuando el Parlamento italiano promulgó la ley sobre vinos típicos y estableció que sus características debían ser constantes y definidas por los estatutos del consorcio. Ese fue el principio para la puesta en marcha del Consorcio para la Defensa de los Vinos Típicos de Pregio Barolo y Barbaresco, fundado oficialmente en 1934 con la tarea de definir el contexto de producción, supervisando contra el fraude, la adulteración y la competencia desleal, promueve el conocimiento de los vinos y defiende su nombre y calidad en los lugares más apropiados. Tras la tregua provocadapor la II Guerra Mundial, el Consorcio se reconstituyó en 1947. En 1963 se promulgó la ley 930, que sancionó el nacimiento de las denominaciones de origen y definió el papel exacto de los Consorcios.
Geografía.
El nombre, de origen celta, significa "lenguas de tierra" y se refiere a las colinas alargadas, a menudo con laderas muy empinados, dispuestas paralelamente entre sí formando valles profundos y estrechos. Los Langhe se encuentran en la parte sur del Piamonte, cerca de los Alpes Marítimos y los Apeninos de Liguria. El área de Langa es una de las regiones más generosas del mundo por la calidad y variedad de su producción de vino. Las raíces de esta excepcionalidad se encuentran en la ubicación geográfica particular, en el clima adecuado y en el rico subsuelo que distingue estas áreas montañosas y las convierte en un ambiente con abundante biodiversidad.
Geología.
El suelo Langhe tiene orígenes sedimentarios y marinos, y deriva de la antigua cuenca terciaria piamontesa. Hace unos 12 millones de años, durante el Mioceno, en el fondo marino se iban depositando los sedimentos que, tras su litificación, dieron lugar a las rocas sedimentarias propias de estos suelos. Durante este largo período de tiempo, las condiciones se modificaron considerablemente, tanto la profundidad del mar como la forma de la cuenca, y como consecuencia, esas rocas registraron cambios en su composición y textura, generando las formaciones geológicas Murazzano (Langhiano-Serravalliano), Lequio (Serravalliano), Areniscas de Diano (tortoniano) y Marne di Sant'Agata Fossili (Tortonian-Messinian), cuyas composición son margas muy ricas en piedra caliza, capas de arena fina y capas de marga arcillosa, en distintas proporciones en función de la formación en que nos encontremos.
El clima.
El área de Langhe está dominada por un clima subcontinental, frío pero no extremo, con características precisas que solo se encuentran en este territorio. El efecto protector de los Alpes y la influencia de las corrientes suaves y húmedas del mar de Liguria, contribuyen a determinar un contexto climático único en todo el Piamonte. La presencia de valles y colinas a diferentes altitudes, así como las diferentes exposiciones y vientos, crean una increíble variedad de microclimas diferentes, que generan condiciones que permiten que la uva disminuya en varias expresiones. En el área de Dogliani se encuentra el clima más fresco, ya que está más cerca de los Alpes y se caracteriza por las crestas estrechas y altas que se enfrentan a la fría llanura de Cuneo. El área de Barolo tiene temperaturas intermedias, se encuentra en un área particular protegida de los vientos pero influenciada tanto por las corrientes alpinas, como por el aumento del aire cálido y húmedo del valle de Tanaro. Las tres crestas montañosas que conforman el área determinan una heterogeneidad de paisajes y, en consecuencia, microclimas. El área de Barbaresco tiende a ser más homogéneo, con temperaturas más suaves y precipitaciones menos abundantes. El paisaje caracterizado por valles estrechos genera más viento que las dos áreas anteriores.
Los vinos.
Los vinos Barolo tienen un color granate completo e intenso, un aroma afrutado y picante al mismo tiempo, dando, tanto en la nariz como en boca, recuerdos a frutas rojas, las cerezas en alcohol y la mermelada, pero también ofrece recuerdos florales a rosa seca y violeta, canela y pimienta, nuez moscada, vainilla y, a veces, regaliz, cacao, tabaco y cuero. Los Barbaresco son 100% Nebbiolo y tiene un color intenso y brillante que se desvanece del rojo rubí al granate y un estimulante ramo de aromas aún afrutados, pero etéreos que recuerdan a mermelada de frambuesa y fruta roja, geranio y morado, pero también pimiento verde, canela y nuez moscada, heno y madera, avellana tostada, vainilla e incluso anís. Debe envejecer al menos dos años, de los cuales nueve meses en roble y después de cuatro se puede definir como "Reserva". Los vinos Dogliani ofrecen un intenso color rojo rubí con reflejos violáceos, una nariz floral y afrutada a moras y cerezas silvestres, una boca seca y armoniosa, con un agradable postgusto que es finamente almendrado y fragante; acidez moderada le da un toque de vivacidad singular. Los Diano d'Alba tiene un intenso color rojo rubí con juveniles reflejos violáceos, aroma fragante y afrutado, marcado con cereza de marasca y, a veces, mora o mermelada, sabor seco, nervioso, seco, agradablemente influenciado por un retrogusto varietal de almendras amargas que estimula al paladar. Con un envejecimiento de al menos 18 meses, se puede exhibir en el tipo "Superior". Los Nebbiolo d'Alba son tintos monovarietales. Se expresa mejor después de unos años y esto depende de la tierra donde nació. El color es rojo rubí y luego granate, la nariz combina toques afrutados de frambuesa, geranio y fresa salvaje con toques etéreos y picantes de canela y vainilla, la boca es totalmente seca, estructurada, donde el alcohol y la acidez crean sensaciones de armonía y elegancia. Origen.
La variedad riesling, también conocida como Riesler y Rieslinger, proviene de la selección de una vid silvestre alemana, originaria de la región del Rhin. La existencia de vinos de uva riesling está documentada por primera vez en 1435, en el inventario de bienes de los condes de Katzenelnbogen (un pequeño principado a orillas del Rhin), quienes poseían "...seis barriles de riesslingen adquiridos a un viticultor de Rüsselsheim". El herborista Hieronymus Bock o Hieronymus Tragus recoge la uva riesling en la edición en latín de 1552 de su compendio de botánica Neu Kreutterbuch.
Características.
La riesling es una uva que, aunque no es suficientemente reconocida por el público en general, sí lo es en los círculos de expertos en el tema, llegando a considerarse una uva de culto. Esta uva es muy utilizada en regiones con temperaturas más bajas, ya que es bastante resistente a las heladas, funcionando muy bien en terruños pobres, rocosos, ligeros y bien drenados. Se desarrollan en cepas de vigor medio alto, porte vertical que, debido a que son dan altas producciones, suelen tumbarse. El desborre y maduración son de media estación. Sus racimos son muy reducidos, compactos y con un pedúnculo corto y resistente, con gran uniformidad en sus uvas que se desprenden con dificultad. Las uvas son pequeñas, de sección circular pero aplanadas. Presentan un color verde pálido en la piel, aunque, al sobremadurar, se vuelve más intenso, estomas muy visibles y abundante pruina. Esta viña es sensible a la podredumbres gris, a la botritis y a la polilla del racimo, siendo muy atacada por el oídio y algo menos por el mildiu. Una vez la uva ha madurado es muy resistente a las heladas, sin embargo, por ser de desborre mediano y estar ubicada, por lo general, en climas fríos, es poco sensible a los fríos de la primavera. El ataque de la podredumbre gris o la sobremaduración da la posibilidad de obtener vinos licorosos. Su sensibilidad a la botritis, cuando se utiliza de manera adecuada, puede facilitar la elaboración de vinos dulces muy aromáticos tipo Sautermes. No debe abonarse con exceso de nitrógeno porque provocaría un exceso de hijuelos y de rebrotes. Es muy sensible al desecado del raquis por lo que se debe aportar magnesio en abundancia.
Zonas de cultivo.
La uva riesling se cultiva principalmente en Francia (Alsacia), Alemania, Suiza, Austria, Rusia, Eslovenia, Croacia, Hungria, Rumania, Norte de Italia, Norte de España, Australia y California en USA. Da lugar a diversas denominaciones de origen (D.O.) en los países en que más se cultiva, principalmente la mencionada Alemania, donde es la uva más cultivada, ocupando el 20.8% de su superficie de cultivo vinícola, para un total de 21.197 ha.2 Destacan también Francia, donde se cultiva en la región de Alsacia (21.9%, para un total de 3.350 ha),3 única región de Francia donde está permitido su cultivo.4 También ocupa superficies destacables de cultivo en Austria, Chequia, Luxemburgo, Italia y otros países. Salvo excepciones se cultiva siempre en zonas de clima fresco.
Vinos.
La uva riesling es la materia prima para elaborar vinos jóvenes muy afrutados. Esta variedad de uva también se utiliza para producir vinos secos que envejecen muy bien, tomando aromas que, sin dejar de ser afrutados, traen recuerdos de miel y, cuando son suficiente maduros, dan en nariz un aroma a pan recién horneado y también a galletas. Por lo general, en fase visual se observa un tono amarillo pajizo, con reflejos verdes brillantes. En nariz se aprecian aromas frutales y florales, se nota el limon, el pomelo, los cítricos en general, la manzana verde y el melocotón, las flores blancas, el anis, la tila, el comino y el hinojo también están presentes en sus vinos. El riesling desarrolla aromas minerales dependiendo del tipo del suelo en el que se encuentra establecido. Su boca es muy fresca de principio a fin, muy redondo, graso y glicérico, no exento de cuerpo. Los vinos de riesling tienen una marcada acidez, incluso sobremadurando las uvas. Por ser muy resistente a las heladas se utiliza para la elaboración del “eiswein” o vinos de hielo.
