Historia.

Las Bodegas Antiguas de los Marqueses de Barolo se encuentran en Barolo, en el edificio con vistas al Castillo de los Marqueses Falletti. Aquí, hace más de 200 años, comenzó una hermosa historia.

La denominación.

La denominación Gavi DOCG produce vinos blancos secos en las colinas que rodean la ciudad de Gavi, en Piemonte. El nombre deriva de Ga Va que significa "tierra de agujeros" en el dialecto local de Liguria, el centro de su zona de producción, y Cortese, la variedad local de uva de la que está hecho exclusivamente, y cuya existencia se informa desde el siglo XVII. Las regulaciones DOCG restringen la producción de Cortese di Gavi a la zona formada por las siguientes poblaciones: Bosio, Capriata d'Orba, Carrosio, Francavilla Bisio, Gavi, Novi Ligure, Parodi Ligure, Pasturana, San , Serravalle , Tassarolo.

Características.

Gavi D.O.C.G se produce tradicionalmente a partir de uvas 100% Cortese, cultivadas dentro de un área geográfica precisa, principalmente montañosa, del cinturón sur de la provincia de Alessandria. Hoy está más extendido en la provincia de Alessandria, especialmente en las colinas alrededor de Novi Ligure y Gavi, en parte en el Oltrepò Pavese y, en menor grado, alrededor de Verona. Las cepas cortese tienen una hoja de tamaño mediano, pentagonal, de cinco lóbulos, a veces de siete lóbulos, de un color verde oscuro con venas más claras. El racimo es mediano-grande, en forma de pirámide cónica, alado y suelto. Las bayas son medianas y grandes, elípticas con piel fina y cerosa, y de color amarillo dorado. Cuando se cosecha temprano, produce vino de buena acidez, poco estructurado ideal para elaborar jóvenes. Sin embargo, los racimos mejores y más maduros pueden producir un vino más complejo y elegante. El vino es amarillo pajizo, con matices verdes, aromas afrutados, con tintes de albaricoque y cítricos, flores blancas y hierbas. Su boca da frescura, tiene cuerpo, es suave y estructurado, maridando con productos del mar, como mariscos y pescados, por lo que a los lugareños les gusta servirlo con las capturas de la zona.

El clima.

El microclima de la zona de producción está caracterizado por abundantes precipitaciones de octubre a abril, 619 mm., con unos veranos calurosos y secos en los que la precipitación mínima en julio es de unos 38 mm. Templado por la influencia de los vientos del mar; la temperatura templada y la excelente insolación del mes de septiembre permite que las uvas maduren por completo, contribuyendo significativamente a las características organolépticas particulares del vino "Gavi docg". La diferencia de temperaturas entre la noche y el día caracteriza la última fase de la maduración de las uvas y también favorece la exaltación de los aromas típicos del Gavi docg.

Los vinos y sus uvas.

La denominación de origen controlado y garantizado " Gavi " o " Cortese di Gavi " está reservada para vinos blancos que cumplan las condiciones y requisitos establecidos en esta especificación de producción, para los siguientes tipos: Tranquilo, Espumoso, Espumoso, Reserva, Método clásico Reserva de vino espumoso.
