Orígenes.
Esta denominación plantó sus raíces, hace más de dos mil años, en el lugar de nacimiento de los viñedos de Burdeos y se extendió hasta un “terroir” que dio a luz en el castillo Haut Brion, en el siglo XVIII, al «nuevo clarete francés». El 9 de septiembre de 1987 se firma el decreto de la denominación Pessac-Léognan, una región cuyas características de suelo, clima, tradiciones de producción de vino blanco y tinto son igualmente excepcionales por calidad y capacidad de envejecimiento, habiéndose expresado durante siglos. Original por su relieve montañoso donde, en las orillas del río Garona, los guijarros se depositaron durante casi dos millones de años, dando lugar a una variedad que solo se puede encontrar aquí. Original por su clima, debido al efecto de dos reguladores naturales, al este el Garona que suaviza las heladas y, al oeste el bosque que actúa como barrera contra el viento y mantiene los niveles de humedad. También original en su geografía, por el entrelazamiento inusual de la ciudad y los viñedos, donde la alineación de las hileras de viñas, que se encuentran cara a cara con los edificios, lucha contra la invasión urbana. Geología y geografía.
Al final del período terciario y al comienzo del período cuaternario, el río Garona depositaba guijarrros redondeados, piedras rotas mezcladas con arcilla, y arena. Los vinos blancos secos de Pessac-Léognan tienen la característica única en el reino de los grandes vinos blancos de combinar complejidad, frescura, vivacidad y armonía. Origen.
La cepa Sauvignon, cuyo nombre nace de la unión de sauvage (salvaje) y vignon (viña), es originaria de Sancerre y Pouly-Fume donde se producen vinos dulces muy reconocidos. Existen gran cantidad de viñedos plantados en la zona de Burdeos (Francia), y según la Organización Internacional de la Viña y el Vino, en su informe de 2013, es la cuarta variedad de uvas blancas más difundida en el mundo con 121000 Ha.
Características.
Los racimos de Sauvignon son pequeños, con uvas también pequeñas, compactas y uniformes, tan apretadas que suelen deformarse al presionarse entre ellas. La forma de las uvas es redondeado-elíptica, su epidermis es verde con estomas y lenticelas muy visibles en maduración. El pedúnculo es muy corto y robusto, lo que hace difícil el desprendimiento de la baya. El hollejo es bastante grueso y su pulpa apenas tiene pigmentación, pero es muy jugosa, consistente y deja en boca un sabor afrutado y muy aromático. Las cepas son vigorosas, de desborre tardía y dan unas producciones altas, al igual que sus rendimientos. Esta variedad de viña se desarrolla bien en suelos poco fértiles, sueltos y que no tiendan a encharcarse. Su resistencia a las heladas invernales es media, pero tolera bastante bien los fríos primaverales. Es muy sensible a varias enfermedades y plagas como la podredumbre gris del racimo, la eutipiosis, el complejo de hongos de la madera, incluso la yesca, el mildiu, el black rot y la excoriosis. También le afecta sensiblemente la polilla del racimo, los ciacdélidos y los ácaros, así como el desecado de raquis y las sequías intensas y la carencia de magnesio.
Cultivo.
Los suelos donde se encuentran viñas de la variedad Sauvignon, requieren de altos niveles de fósforo y magnesio y, debido a lo vigoroso de esta viña, necesitan ser abonados con poco nitrógeno puesto que, si no se hiciese de esta manera, se producirían muchas racimas (conjunto de racimos que por pequeños y despreciables quedan en las cepas cuando se vendimia) ya que muchas yemas del año brotan dando hijuelos de madera. Una buena opción es utilizar el abonado foliar pues, aunque a veces retrasa la maduración del fruto, obtiene muy buenos resultados. Debido a que no es fértil en las primeras yemas, es recomendable hacer podas largas para la obtención de rendimientos medios-altos. Los vientos fuertes le afectan notablemente, ya que sus sarmientos son frágiles y quebradizos, por lo que se recomienda su conducción en espaldera, lo que también.
