Requisitos de la DOCG.
Solo se produce vino blanco en la región de Soave, y un mínimo del 70% debe ser la uva Garganega. Para el vino Soave DOC, hasta el 30% de la mezcla puede provenir de Trebbiano di Soave, también conocido como Verdicchio y Nestrano. Esta uva es distinta de la variedad Trebbiano Toscano, que es la de menor calidad de la Toscana. Las reglas del DOC ponen un nuevo énfasis en las variedades de calidad y excluyen a Trebbiano Toscano, dejándole tan solo formar parte de la mezcla, como mucho, en un 15%. Han realizado un proceso muy ambicioso, como la Evaluación del ciclo de vida (LCA), o la evaluación completa del ciclo de vida de un producto o servicio, que considera las interacciones y los impactos ambientales, causados directa o indirectamente, hacia la salud humana, la calidad del ecosistema y el agotamiento de los recursos, examinando también los efectos económicos y sociales.
