Las cuatro denominaciones.

Los vinos blancos secos de Chablis son una referencia a nivel mundial. La historia.

Sus orígenes vitícolas se encuentran en la era monástica, pero solo en las últimas décadas la región realmente se ha ganado su designación no oficial como porte d'or de Borgoña.o "puerta de oro". Cuando las leyes de AOC de Chablis se establecieron en 1938, el INAO restringió la zona vitícola a áreas en las que los suelos se superponen a la marga Kimmeridgiana. Los mejores viñedos de Chablis, los Grands Crus , que suman alrededor de 100 hectáreas en total, se encuentran en un tramo de laderas de dos kilómetros al norte de la ciudad, orientados al sur y suroeste en un arco junto al Serein. Los viñedos.

Los viñedos de Chablis solo producen vinos blancos secos y fragantes, elaborados con una sola variedad de uva, Chardonnay. Esta variedad de uva se expresa de manera diferente, dependiendo de su exposición y la composición del suelo. La uva Chardonnay se llama localmente Beaune; presenta una hoja mediana, orbicular, lóbulo entero, seno peciolar en forma de lira, con un color verde claro.
