Estrategia comercial y de desarrollo.

Cuando tenía 18 años, Mathilde lo dejó todo y se fue a estudiar administración de empresas a China, donde se especializó en estrategia internacional de negocios. Allí aprendió mandarín. Tomaba las clases en ese idioma que luego le sería tan útil para estar al cargo de la estrategia comercial y de desarrollo de negocio del grupo Chapoutier. Llevar el apellido Chapoutier a veces puede ser una presión añadida. No obstante, a ella le ha servido para llevar a cabo este proyecto sin complejos, con el que transmite al mundo su concepción del vino, más cercana y relajada. En un viaje por la Provenza, Mathilde se enamoró de unos viñedos ubicados al pie de las montañas de Sainte Victoire y los vinos que a partir de ellos elaboraba la propiedad Grand Ferrage. En cierto modo los apadrinó y sacó lo mejor de ellos como asesora. Finalmente, terminó comprando la bodega y es allí donde elabora sus vinos ahora. La brújula que aparece en las etiquetas de estos vinos, diseñadas por ella misma, representa lo que para Mathilde significa el vino, siempre ligado a los viajes. Un símbolo de su visión personal del mundo del vino, reflejo de su manera de vivir su actividad en este sector. Además, con ellos defiende una cultura vinícola más hedonista, ligada más a la gastronomía que a la intelectualidad. De hecho, estos vinos parecen estar especialmente creados para acompañar platos de comida casera mediterránea o, simplemente, para disfrutar este verano al fresco con amigos.

Tradición unida a innovación.

La casa M. Chapoutier posee hoy día la propiedad vitivinícola más importante de Hermitage, con 34 hectáreas de las 115 ha de la denominación de origen. La adopción del cultivo biodinámico en todos sus cultivos, uniendo la tradición con la innovación, junto a la excepcional calidad de sus vinos, han convertido a esta casa en el marco de referencia de una de las denominaciones históricas de Francia. Desde sus orígenes en 1808, varias generaciones han ido conformado una de las más bellas casas vitivinícolas del valle del Rhône. El cultivo biodinámico.

Pero lo esencial de la revolución emprendida por Michel, es el haber apostado por el cultivo biodinámico, iniciando con ello un cambio radical en la forma de abordar el cultivo de la vid. Su objetivo es poner en práctica una agricultura del siglo XXI, dejando que se exprese libremente el terruño, respetando sus ciclos y equilibrios naturales y considerándolo como una fuente de vida, cuyas riquezas deben preservarse. La totalidad de viñedos de la casa M. Chapoutier se cultivan hoy por Biodinámica, lo que se traduce en tres aspectos básicos:
I. El terreno. Tratado con gran respecto, sin adicción de abonos químicos, produce rendimientos muy bajos, ayudado de una poda severa, viñas viejas y una selección de masas.
II. El biotipo. Cuidado sin necesidad de uso de pesticidas, o herbicidas.
III. La identidad del vino de pago. Métodos de vinificación tradicional, levaduras indígenas y ausencia de fermentación a baja temperatura.

Iniciativas originales.

Su carácter innovador y generoso han llevado a Michel a tomar iniciativas originales también en otros campos. Las etiquetas de sus vinos se han sobreimpreso en braille.
