Gerard Bru, propietario del dominio Puech-Haut es un hombre de recursos. Industrial convierte en la viticultura, hizo una vuelta a una pasión de toda la vida, "tierra". En la tierra cruda de viñedos, construyó lo que hoy es una de las bodegas más grandes de la zona, en el centro que ha dado lugar al "Castillo Puech-Haut", de las piedras de la antigua prefectura de Montpellier. Gerard Bru redime y piedra a piedra trasplantado en el medio de su nueva propiedad. Fue durante este trabajo que descubrió una cabeza de carnero, piedra ornamental de una capilla del siglo XII o XIII y que se convirtió en el emblema del castillo Puech Haut. Todos los vinos de Château Haut-Puech son potentes y audaces, con mucho carácter. Los precios están especialmente pensando en los recursos invertidos, muy razonable. Los vinos de Puech-Haut mantienen vinos. La elaboración del vino se basa en el principio de separación de las variedades de uva y parcelas. Para conocer el potencial, cada parcela se cosechó, fermentado y criado por separado. Esto es necesario para un campo joven sin muchos años de experiencia. La empresa.
Con el tiempo, Bru se convirtió en un industrial a la cabeza de una compañía de 500 empleados, que posteriormente vendió a una empresa mayor. Entretanto, alimentaba su amor por el trabajo de su padre, intendente de la Escuela Nacional de Agricultura de Montpellier. El comienzo de la gran aventura en Puech Haut se produjo con la compra de una parcela de unas 30 hectáreas de viñedo al noroeste de esa ciudad. Un terreno de suelo arcilloso y calcáreo, con guijarros, ideal para cultivar la viña. En aquel entonces la parcela aún no pertecenía a la denominación de origen, pero sería cuestión de tiempo. Los olivos se arrancaron para replantar cepas de vid y la granja que había fue reemplazada por un castillo donde se instaló la bodega. Entretanto, Bru contrató a Michel Rolland para que trabajara con él entre los años 1996 y 2006, que junto a su enólogo Mathieu Ciampi y Philippe Cambie, uno de los mayores expertos del Ródano, empezaron a elaborar grandes vinos en este lugar de Francia. Hoy en día, el viñedo en propiedad se extiende por 184 hectáreas y está plantado con las variedades blancas Viognier, Marsanne y Roussanne, y las tintas Garnacha, Syrah y Carignan.
Todas ellas se reparten entre las denominaciones Côteaux du Languedoc, Pic Saint Loup (19 hectáreas) y en Saint Drézéry (92 hectáreas), dos pequeñas AOP de Languedoc.

Vermentino, o Rolle, como es conocido en el sur de Francia es una uva blanca del Mediterráneo. Ha habido diferentes hipótesis sobre el origen de la vermentino. Muchos sostienen que su origen es español, a la Vermentino se le asocia más con Liguria (donde se le conoce como Pigato) y con Riviera Ligure di Ponente, de hecho, el análisis de ADN confirmó que era idéntica a la pigato de Liguria y a la favorita de Piamonte. No está claro si la vermentino es también idéntica a la variedad rollo, que se encuentra al este de la Provenza, en los alrededores de Niza, ya que "rolle" es un sinónimo de la vermentino. Esta variedad se ha cultivado en la provincia de Sassari (región de Gallura, al norte de Cerdeña) desde el siglo XIV.
Zonas de cultivo.

Con la Vermentino se elaboran normalmente vinos ligeros y aromáticos con acidez y notas de limón con tintes refrescantes. Por el contrario, los vinos Vermentino de Bolgheri en el norte de la Toscana son más respetados por su profundidad y complejidad, y se pueden comparar con Viognier por sus características florales. Pocos vinos elaborados con Vermentino tienen la estructura suficiente para envejecer, por lo que es mejor consumirlos jóvenes. Se utiliza en coupages y en vinos varietales de DOC conocidos como Colli di Luni y Cinque Terre. Sus vinos se caracterizan en vista por tener un color amarillo pálido con reflejos verdosos, limpios y brillantes, en nariz se suelen encontrar notas frutales, flores blancas, cítricas y minerales, mientras que en la boca deja una sensación refrescante.
