Historia.
El vino fue introducido en la provincia de Málaga por los fenicios, que no solo trajeron vinos provenientes del Mediterráneo, sino que también cultivaron la vid. Siglos más tarde, en época romana, encontramos cuantiosos indicios que revelan la importancia social y económica que tuvo la producción vitícola en ese territorio. Los musulmanes continuaron con el cultivo de la vid para así producir vino y pasas en estas tierras. A medida que se fueron sucediendo los siglos, los caldos malagueños mejoraron su prestigio hasta alcanzar una gran fama. En época de Felipe III se fundó la Hermandad Gremial de Viñeros, que perdura con su faceta gremial en lo que hoy en día se conoce como el Consejo Regulador.
El Consejo Regulador.
El Consejo Regulador es el órgano de gestión de las denominaciones de origen “Málaga”, “Sierras de Málaga” y “Pasas de Málaga”, y cuyos fines principales son la representación, defensa, garantía, formación, investigación, desarrollo e innovación de mercados y promoción tanto de los vinos como de las pasas amparados. Los órganos del Consejo Regulador son el Pleno y la Presidencia. En el Pleno están representadas las personas físicas o jurídicas titulares de viñedos, bodegas e industrias paseras, inscritos en los registros establecidos en el Reglamento. Actualmente el pleno del Consejo Regulador lo componen 20 vocales: 16 representantes del sector vitivinícola (8 en representación de la D.O. Málaga y 8 en representación de la D.O. Sierras de Málaga) y 4 del sector pasero en representación de la D.O. Pasas de Málaga. La zona de producción de la D.O. Sierras de Málaga coincide con la de la D.O. Málaga. La componen 67 municipios situados en cuatro áreas de producción: Axarquía, Montes de Málaga, Norte, Manilva y la subzona de la Serranía de Ronda. Los vinos con D.O. Sierras de Málaga se elaboran en bodegas situadas en la Serranía de Ronda, siempre con el 100% de las uvas procedentes de esta subzona, debiendo cumplir además con otros requisitos específicos. En primer momento existía sólo la D.O. Málaga con su particular forma de elaborar vinos con su envejecimiento por soleras y criaderas. Se decidió crear la D.O. Sierras de Málaga para poder elaborar vinos siguiendo los métodos de otras zonas vitivinícolas con lo que también se amplió las variedades de uvas permitidas para la elaboración de vinos de Málaga.
Las uvas y los vinos.
Los vinos Sierras de Málaga se pueden elaborar con las variedades Blancas: Pero Ximen (Pedro Ximenez), Moscatel de Alejandría, Moscatel Morisco (Moscatel de grano menudo), Chardonnay, Macabeo, Colombard, Sauvignon Blanc: Lairen y Doradilla, Gewürztraminer, Riesling, Verdejo y Viognier; y las tintas: Romé, Cabernet Sauvignon, Merlot, Shyrah, Tempranillo, Garnacha, Cabernet Franc, Pinot Noir, Petit Verdot, Graciano, Malbec, Monastrell y tintilla (tintilla de Rota). La D.O. Sierras de Málaga ampara vinos “tranquilos”, con un contenido alcohólico de entre 10 y 15´5 % alc y un contenido en azúcares inferior a 12 gr/l. Se clasifican en blancos, tintos y rosados. Según su envejecimiento se etiquetan como crianza, cuando tienen un envejecimiento mínimo de 2 años, 6 meses de ellos en barrica de roble, reserva, cuando envejecen por 3 años, de los cuales, 12 meses en barrica de roble y gran reserva al envejecer al menos 5 años, 24 meses de ellos en barrica de roble y 36 meses en botella. También hay grandes reservas blancos y rosados, ambos requieren un envejecimiento mínimo de 5 años, 6 meses de ellos como mínimo en barrica de roble.
Notas de cata.
Los vinos elaborados en Sierras de Málaga han sido tradicionalmente mayormente vinos dulces.Los vinos con D.O. Sierras de Málaga, blancos, tintos y rosados completan la oferta vinícola de la provincia, con vinos naturales, con un gran despliegue de aromas. Las características organolépticas de los vinos de la Denominación de Origen «Sierras de Málaga» son las siguientes: Vinos blancos de color amarillo pajizo con reflejos verdosos, hasta amarillo dorado o dorado en los vinos con crianza; francos y afrutados en nariz. En vinos envejecidos los aromas frutados se mantienen, aunque atenuados y presentarán además aromas propios de la crianza. En boca son vinos secos o abocados con volumen, equilibrados, frescos los jóvenes, y untuosos los fermentados y/o envejecidos en madera de roble. Vinos rosados de color de rosado a rosado rojizo, en nariz afrutados y florales, compartiendo atributos y matices propios de los vinos blancos y de los tintos, con volumen en boca, siendo secos o abocados, y equilibrados. Vinos tintos de color rojo violeta hasta rojo rubí, de capa media a alta. Los sometidos a larga crianza pueden adquirir tonos rojo teja. Francos en nariz, con notas frutales y aromas propios del terruño, ganando complejidad en los vinos sometidos a envejecimiento, con la evolución y aromas propios de la crianza. En boca son vinos con volumen, estructurados pero armoniosos, con taninos maduros, buena persistencia, untuosos y concentrados los sometidos a envejecimiento.

Origen.
Según se cree, el origen de esta variedad se sitúa en La Rioja y probablemente también Navarra. En la actualidad se extiende por otras zonas de España. La uva graciano está recomendada en las comunidades autónomas de Navarra, País Vasco y La Rioja, mientras que su autorización se extiende también hasta Andalucía, Cantabria, Castilla-La Mancha, Castilla y León, Extremadura y Comunidad Valenciana. Desde su origen hasta ahora, siempre se han producido bajas cosechas, pero esta uva es clave en los coupages de los vinos de Rioja y Navarra, con un papel secundario pero fundamental al aportar, además de estructura y color, una característica acidez necesaria para el envejecimiento de los vinos consiguiendo grandes reservas de calidad excepcional.
Características.
La uva graciano es una variedad de cultivo complicado, vigorosa, de porte erecto, baja fertilidad y escaso rendimiento. Es una uva que tiene un desborre de medio a tardío, por lo que no es muy dada a las heladas primaverales, y con una maduración tardía. La graciano es una variedad que prefiere suelos arcillosos, calcáreos y también de relativa frescura. Resistente a las sequías y a enfermedades como al mildiu y también bastante resistente al oídio. Los racimos de la variedad graciano son grandes y compactos con hombros cilíndricos cortos. Sus uvas son pequeñas, esféricas, de piel gruesa de un color azul intenso casi negro. su pulpa es consistente y sin pigmentación. Es una uva de poco rendimiento, por lo que no es muy abundante, cultivándose en el mismo viñedo con otras variedades. Prospera en climas áridos y cálidos. La vid produce una baja cantidad de bayas, delicadamente aromatizadas, que suelen ser vendimiadas a finales de octubre. La uva graciano es conocida también como bastardo nero, bordelais, cagnolale, cagnovali negro, cagnulari, cagnulari bastardo, cagnulari sardo, caldaredou caldarello, cargo muol, couthurier, graciana, graciano tinto, gros negrette, minustello, morrastel, morrastrel, tinta do padre Antonio, tinta miuda, tintilla, Xerez, además de zinzillosa.
Zonas de cultivo.
Es una uva eminentemente española y en particular de la Denominación de Origen Calificada Rioja, donde están plantadas aproximadamente 400 hectáreas de esta variedad. Según la Orden APA/1819/2007, la uva graciano es una variedad vinífera recomendada en las comunidades autónomas de Navarra, País Vasco y La Rioja, mientras que está autorizada en Andalucía, Cantabria, Castilla-La Mancha, Castilla y León, Extremadura y Comunidad Valenciana. Con el nombre de morastel o courouillade es cultivada en el Languedoc-Rosellón (Francia), pudiendose encontrar también viñedos con graciano en Australia y California.
Vinos.
El vino elaborado con esta variedad de uva se caracteriza por su intenso color rojo, una importante acidez y un fuerte aroma. Tiene una gran capacidad de envejecer correctamente, aumentando su calidad durante la crianza, lo que ha hecho que sea muy apto para elaborar vinos gran reserva, tanto en La Rioja, como en Navarra. Sus aromas, peculiares y agradables, aportan finura a los coupages en los que se utilizan mostos de graciano. Son vinos aromáticos en los que podemos apreciar frutas rojas y también negras, toques torrefactos, regaliz y flores. Al evolucionar aparecen aromas balsámicos, cueros. En boca se aprecian muy bien sus taninos y el regaliz. Debido a la gran cantidad de sustancias pécticas que poseen, dificulta su clarificación. Por su contenidos polifenólicos y también por su acidez, la variedad graciano es ideal para envejecer en barrica, siendo ideal para la elaboración de vinos de crianza, reserva y también gran reserva, obteniéndose excelentes vinos de guarda.
