Geografía.
Desde antiguo esta zona es eminentemente agrícola, donde la producción de vinos cuenta con una especial tradición. El área de producción de Amarone della Valpolicella DOCG se encuentra en la región del Véneto, donde se encuentra Venezia, al norte de Verona, se encuentra este valle de Valpolicella y cubre una vasta área montañosa en el norte de Verona, caracterizada por una orografía variada y particular. De hecho, las colinas y los valles se alternan en dirección este-oeste, inclinándose hacia el sur hacia el valle del Po y girando hacia el norte en las montañas Lessini. Elaboración.
Amarone della Valpolicella DOCG es un vino tinto italiano, elaborado en el área de Valpolicella por el método “appassimento o rasinate”, mediante el cual se pasifican las uvas, en la provincia de Verona, en Véneto, con una combinación de Corvina, Corvinone y Rondinella. El vino se elabora mediante el secado de las uvas durante unos 120 días para conseguir unas uvas pasas, una vez pasificadas se prensan y se maceran con los hollejos de 30 a 50 días, hasta que se obtener una fermentación alcohólica completa. El nombre proviene de la palabra "amaro”, amargo en italiano. Se produce exclusivamente con uvas seleccionadas y secas en bastidores especiales, de modo que, bajo ciertas condiciones de temperatura, humedad y ventilación, pierden aproximadamente la mitad de su peso, lo que favorece la concentración de azúcares. La operación de secado, que dura aproximadamente de 3 a 4 meses, es delicada y debe verificarse diariamente para identificar y eventualmente eliminar las bayas no saludables. Solo después del secado completo de las uvas, es posible proceder con la vinificación y el envejecimiento, durante un mínimo de 2 años en barricas de madera, 4 años en el caso de la versión Reserva. Aunque el proceso puede recordar a la elaboración de los vinos Pedro Ximénez, en este caso se usan únicamente uvas tintas.
Notas de cata.
Amarone della Valpolicella DOCG es un vino passito seco, es decir, sin azúcar residual. Un vino similar en cierta forma, vinificado después del secado de las uvas, es Sforzato di Valtellina DOCG , producido en Lombardía con uvas Nebbiolo. Tiene una fuerte personalidad y puede permanecer en bodega por muchos años. Su fase visual es rojo rubí intenso, que tiende al rojo granate con el envejecimiento. Su nariz es intensa y compleja, con notas de violeta, ciruela y arándano. Con el envejecimiento surgen notas de chocolate, frutas secas, tabaco, especias, gracias también al proceso de secado. El sabor es intenso, muy suave, con cuerpo y muy cálido.

Origen.
Hay varias teorías sobre el origen del nombre de esta uva, una sería la palabra nebbia, que significa “niebla”, y hace referencia a la que se postra sobre las colinas de la región del Langhe, en el noroeste de Italia, durante el tiempo de la cosecha. Otra posibilidad sería por el velo lechoso, similar a la niebla, que crece sobre la piel de las uvas cuando alcanzan la madurez y, por último, es posible que derive de la palabra italiana nobile, que significa noble, por la nobleza de esta uva. Desde el punto de vista ampelográfico, el origen de la uva nebbiolo se sitúa en la región italiana de Piamonte, aunque otros autores la ubican en Lombardía. En el siglo I A.C., Plinio el Viejo describió la calidad excepcional del vino producido en Pollenzo, una región localizada al noroeste de lo que ahora es la zona DOCG de Barolo. Aunque Plinio no menciona explícitamente el nombre de la uva de la que se hacía el vino de Pollenzo, la descripción del vino guarda similitudes con las descripciones posteriores de los vinos basados en nebbiolo. La primera mención explícita a la nebbiolo data de 1268 donde se dice que la "nibiol" crecía en Rívoli, cerca de Turín. Posteriormente, en 1303, un productor del distrito de Roero dice tener un barril de "nebiolo”. En el tratado de 1304 titulado Liber Ruralium Commodorum, el jurista italiano Pietro Crescenzi describe el vino hecho de "nubiola" como de excelente calidad. Hay estatutos del siglo XV de la región de La Morra que demuestran la alta estima que se tenía a la nebbiolo, donde se imponían penas, que podían llegar a la amputación de la mano, por cortar viñas de nebbiolo. En el siglo XVIII hay noticias, por primera vez, de uva nebbiolo fuera del Piamonte, cuando los británicos, al no poder disponer de vino de Burdeos debido al conflicto que tenían con los franceses, recurrieron a vinos de esta variedad, aunque las dificultades que encontraban para llevar el vino desde Piamonte a Londres, hicieron que se decantaran por vinos de Oporto y de Jerez. La cantidad de viñedos de nebbiolo continuaron en crecimiento durante el siglo XIX, hasta que la filoxera los diezmó. Después de esto, muchos viticultores decidieron replantar sus terrenos con otras variedades de uva, lo que supuso que la extensión de nebbiolo se redujera, dando como consecuencia que, hoy en día, los viñedos de nebbiolo en Piamonte no alcanzan el 6%.
Características.
Esta cepa es muy caprichosa, por decirlo de alguna forma. Tiende a madurar muy tarde, cuando el clima en la región empieza a ponerse difícil. Es muy susceptible a las plagas y podredumbre. En la bodega es delicada, muy propensa a la oxidación, la cual cambia su color, y puede perder sus aromas frutales. Se debe tener mucho cuidado en su manejo desde el viñedo hasta que llega a la botella, pero cuando todos estos factores convergen en una perfecta armonía, el resultado final puede ser excepcional.
Zonas de cultivo.
La uva nebbiolo no es tan viajera como la merlot o la chardonnay; es decir, no la encontramos por todo el mundo. Fuera de su natal Italia, sólo en alguna parte de California, como por ejemplo en Napa Valley, y en el Valle de Guadalupe, en México, podemos probar cierta cantidad de vinos hechos con esta uva.
Vinos.
Esta variedad es autóctona es utilizada para crear dos excelentes vinos principalmente: el Barolo y el Barbaresco. Ambos son tipos de vinos y denominaciones de origen al mismo tiempo, los cuales pueden ser considerados como los mejores vinos de toda Italia. Los vinos elaborados con la variedad nebbiolo pueden requerir años de envejecimiento para equilibrar el nivel de taninos con otras características. Así, la nebbiolo produce vinos tintos de color claro que pueden contar con mucha cantidad de taninos en su juventud. A medida que el vino envejece, desarrolla matices a piel de naranja en el borde de la copa y madura para revelar otros aromas y sabores, como a violetas, alquitrán, hierbas salvajes, cerezas, grosellas, trufas, tabaco y ciruelas pasas.

Origen.
La Corvina es una variedad de uva tinta originaria del norte de Italia, que se cultiva principalmente en la región italiana del Veneto. También es conocida como Corvina Veronese o Cruina, y en Europa como Cassabria, corvina veronese o cruina. En el Véneto la corvina es confundida de forma frecuente con la corvinone, una uva tinta utilizada generalmente en la producción del vino de uvas secas. A lo largo de un buen tiempo, la corvinone se ha considerado un clon de la corvina, pero el perfil de ADN ha probado que son dos variedades de uvas diferentes. En 2005, un estudio genético demostró que la corvina era familiar de la uva rondidella del Véneto.
Características.
Las cepas de corvina producen uvas de pequeño tamaño, con bajos niveles de taninos y poco color, pero tienen hollejos gruesos que son para el secado y protegen a la uva de la podredumbre. Es una uva de maduración tardía, propensa a dar producciones elevadas que pueden pueden afectar reduciendo la calidad del vino. Durante el desarrollo de la cepa se observa que los primeros brotes no generan frutos. Las plantas precisan de pérgolas para desarrollar tallos largos y generar más brotes. Normalmente se junta con otras uvas para que el vino adquiera el color que le falta.
Zonas de cultivo.
La zona principal donde podemos encontrar esta uva es sobre todo en la región del Veneto. Aunque en Italia es importante, no ha sido muy exportada, pudiendo encontrarse en Australia y en Argentina, donde se ha comenzado a experimentar en los últimos años con esta uva, utilizando proporciones de Malbec para darle el color.
Vinos.
La corvina se usa con otras variedades para crear los vinos tintos regionales de Bardolino y Valpolicella, que tienen un suave sabor afrutado con notas de almendra. Estas mezclas incluyen a las variedades rondinella y molinara (y rossignola para el vino posterior). También es usada para la producción de amarone y recioto. La corvina produce vinos de cuerpo ligero o medio con un luminoso color carmesí. Las uvas tienen mucha acidez y pueden producir vinos con notas a tarta y a almendra. Al final deja notas a guinda.
